Chili Green Onion Dumpling Bake

Ingredients

  • Sushi rice (for serving, cooked separately)

  • 1 can full-fat coconut milk

  • 2 tbsp red curry paste

  • 1 tbsp minced garlic

  • 1 tbsp minced ginger

  • 2 tbsp soy sauce

  • 2 tbsp rice vinegar

  • 1 tsp sesame oil

  • 1 tbsp honey

  • 1 tbsp sriracha (optional, for heat)

  • Frozen dumplings of choice (e.g., chicken & veggie)

  • 1 cup chopped bok choy

  • 2–3 sliced green onions

  • Crunchy chili onion oil (I like the one frombTrader Joe’s)


Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a baking dish, whisk together:

    • Coconut milk

    • Red curry paste

    • Garlic

    • Ginger

    • Soy sauce

    • Rice vinegar

    • Sesame oil

    • Honey

    • Sriracha

  3. Stir in the chopped bok choy.

  4. Nestle the frozen dumplings into the sauce mixture.

  5. Bake uncovered for 20–25 minutes, until dumplings are heated through and sauce is bubbling.

  6. Top with sliced green onions and a generous spoon of crunchy chili onion oil.

  7. Serve hot over a bed of steamed sushi rice. Enjoy!
