Dressing

1/3 cup white wine vinegar
1/3 cup olive oil
Juice of 2 limes
1 tsp salt
1 tsp garlic powder
1 tsp Cajun seasoning
1 tsp chili lime seasoning
1 tbsp honey
Veg Mixture
3 bell peppers (any colors), diced
1 jalapeño, finely diced (remove seeds for less heat)
1 avocado, diced
1 bunch cilantro, chopped
1 can corn, drained
1 can black beans, drained and rinsed
1 can pinto beans, drained and rinsed
1/2 red onion, finely diced
Instructions
In a small bowl or jar, whisk together the white wine vinegar, olive oil, lime juice, salt, garlic powder, Cajun seasoning, chili lime seasoning, and honey until well combined. Set aside.
Dice the bell peppers, jalapeño, avocado, and red onion. Chop the cilantro. Drain and rinse the corn and both types of beans.
In a large mixing bowl, combine the chopped vegetables, beans, corn, and cilantro. Gently fold in the diced avocado last to avoid mashing it.
Pour the dressing over the mixture and toss everything together until evenly coated.
For best flavor, cover and refrigerate for at least 30 minutes before serving. Serve with tortilla chips or as a topping for tacos, bowls, or salads.
