Elote Street Corn Salad

Ingredients

2 cups sweet corn (fresh, canned, or frozen and thawed)
1/4 cup mayonnaise
Zest of 1 lime
Juice of 1 lime
1 avocado, diced
1 jalapeño, finely chopped
1 tsp chili lime seasoning (such as Tajín)
1/2 cup fresh cilantro, finely chopped
1/4 cup crumbled Cotija cheese
Instructions
In a large bowl, combine the corn, mayonnaise, lime zest, lime juice, avocado, jalapeño, chili lime seasoning, cilantro, and Cotija cheese.
Stir gently until everything is evenly mixed and coated.
Serve immediately, or chill for 10–15 minutes for extra flavor.
Serving Suggestions
Scoop with tortilla chips as a dip.
Serve as a side dish at BBQs or potlucks.
Add on top of burrito bowls with grilled chicken or steak.
