Fresh Corn Salsa

Ingredients

4 ears of corn, boiled and kernels cut off
1/2 small red onion, finely diced
1/2 or 1 jalapeño (depending on spice level), finely diced
1 cup fresh cilantro, chopped
Juice of 1 lime
Salt and pepper
Instructions
Prepare all ingredients and mix well! This stores well and is best paired with chips and guacamole, or as an easy side dish. We also love adding to burrito bowls and salads!
