Hot Honey Shrimp Bowl

(Serves 2)

For the Bowl
1.5 cups brown rice or rice pilaf
1/4 red onion, finely diced
1/2 cup corn
14 cup cilantro, diced
1/2 mango, diced
For the Shrimp
1 lb fresh shrimp
1 tbs butter
1 tsp each:
Chili powder
Paprika
Cajun seasoning
Chili lime seasoning
For the dressing
2 tbs honey
2 tbs white vinegar
1 tsp sriracha
1 tbs chili onion crunch
Juice of 1 lime
Instructions
Cook the rice according to package instructions on the stove or in a rice cooker.
While rice is cooking, prepare the onion, corn, cilantro, and mango. Set aside.
Coat the shrimp in the seasonings. Add the butter to a large skillet and heat. Add in the minced garlic and sauté until fragrant (about 30 seconds). Cook the shrimp for 1.5-2 minutes on each side until pink. Set aside.
Prepare the dressing by adding all ingredients to a small mixing cup and whisking until combined.
Assemble the bowl by using the rice as the base, layering on the toppings, and finishing with the shrimp. Drizzle with the hot honey dressing to finish and enjoy!
