Layered Greek Hummus Dip

Ingredients

  • 2 cups store-bought or homemade Greek hummus

  • 1 1/2 cups cherry tomatoes, quartered

  • 1 cup finely diced cucumber

  • 1/2 cup finely diced red onion

  • 2-3 pepperoncini peppers, finely diced

  • 1/4 cup Kalamata olives, pitted and chopped (optional)

  • 1 tsp olive oil

  • Salt and pepper to taste

  • Smoked paprika and crumbled feta, for garnish

  • Optional garnish: lemon wedges or diced chives


For Serving

  • Pita rounds

  • Sliced cucumber


Instructions

  1. In a bowl, combine the cherry tomatoes, cucumber, red onion, pepperoncini, and olives (if using). Toss with olive oil, salt, pepper, and any additional seasonings of your choice. Set aside.

  2. Spread a 1-inch layer of hummus evenly across a serving platter.

  3. Top the hummus with the prepared vegetable mixture.

  4. Sprinkle with smoked paprika and crumbled feta. Garnish with lemon wedges or fresh herbs like chives, if desired.

  5. Serve with pita rounds and sliced cucumber for dipping.


Enjoy this healthy and fresh appetizer! Pairs well with a mimosa or glass of prosecco :)
