Mediterranean Chopped Salad

Ingredients:

1 pint cherry tomatoes, halved
1 English cucumber, quartered lengthwise and sliced
1 small red onion, finely diced
1 cup crumbled feta cheese
3 tablespoons capers
1 tablespoon caper brine (juice from the caper jar)
¼ cup balsamic vinaigrette dressing
1 teaspoon Italian seasoning
1 teaspoon dried oregano
Salt and freshly ground black pepper, to taste
Instructions:
In a large bowl, combine the cherry tomatoes, cucumber, red onion, feta, and capers.
Drizzle in the caper brine and balsamic vinaigrette. Sprinkle with Italian seasoning, oregano, salt, and pepper.
Gently toss everything together until evenly mixed.
Serve immediately or refrigerate for later.
Serving Suggestions:
Add to a green salad for extra flavor
Spoon onto pita chips for a quick appetizer
Use as a topping in a grain bowl (try quinoa, farro, or brown rice)
