Spinach Feta Egg White Wrap

Ingredients:

1 large wrap or tortilla (I use Joseph’s Whole Wheat Lavash)
Avocado oil spray or a drizzle of avocado oil
1/3 cup frozen hash brown potatoes (plain, no additives)
1/3 cup frozen spinach
1/2 cup egg whites
2 tablespoons crumbled feta
Salt and pepper, to taste
Green salsa, for serving
Instructions:
Heat a small frying pan and spray with avocado oil (or drizzle some oil). Add the frozen spinach and hash browns. Cook for about 5 minutes, stirring occasionally, until the potatoes start to get crispy and the spinach is no longer watery.
Spray a little more oil in the pan, then add the egg whites and feta. Scramble everything together until fully cooked.
Transfer the mixture onto your lavash wrap. Fold the ends in, then roll it up tightly. Lightly spray the pan again with oil, and place the wrap seam-side down to toast. Flip and toast the other side.
Remove from heat, slice in half, and let cool for 5 minutes (it’ll be hot!). Optional, but highly recommended: Serve with guacamole or salsa verde. Trader Joe’s Guacasalsa is a great pairing!
