10 Minute Teriyaki Chicken Rice Bowls

Ingredients

1 package Trader Joe’s frozen Teriyaki Chicken
1 Asian salad kit (use half the dressing)
2 tablespoons low sodium soy sauce
1 pouch microwave Jasmine rice
1 avocado, sliced
2 tablespoons light mayo
1 tablespoon sriracha
Sliced green onion, for topping
Instructions
Cook the Chicken: Prepare the frozen teriyaki chicken according to package instructions.
Mix the Salad: In a bowl, combine the salad kit with half the included dressing and 2 tablespoons of low sodium soy sauce. Toss until evenly coated.
Prepare the Rice: Microwave the Jasmine rice according to package instructions.
Make the Spicy Mayo: In a small bowl, stir together the light mayo and sriracha until smooth.
Assemble the Bowls: Divide the rice between two bowls. Top with the teriyaki chicken, dressed salad, and sliced avocado. Drizzle with spicy mayo and sprinkle with green onions.
