10 Minute Teriyaki Chicken Rice Bowls

Ingredients

  • 1 package Trader Joe’s frozen Teriyaki Chicken

  • 1 Asian salad kit (use half the dressing)

  • 2 tablespoons low sodium soy sauce

  • 1 pouch microwave Jasmine rice

  • 1 avocado, sliced

  • 2 tablespoons light mayo

  • 1 tablespoon sriracha

  • Sliced green onion, for topping


Instructions

  1. Cook the Chicken: Prepare the frozen teriyaki chicken according to package instructions.

  2. Mix the Salad: In a bowl, combine the salad kit with half the included dressing and 2 tablespoons of low sodium soy sauce. Toss until evenly coated.

  3. Prepare the Rice: Microwave the Jasmine rice according to package instructions.

  4. Make the Spicy Mayo: In a small bowl, stir together the light mayo and sriracha until smooth.

  5. Assemble the Bowls: Divide the rice between two bowls. Top with the teriyaki chicken, dressed salad, and sliced avocado. Drizzle with spicy mayo and sprinkle with green onions.
