Crispy Chicken & Cauli Rice Stir Fry with Honey-Teriyaki Glaze

Serves: 2

Ingredients
½ lb ground chicken
1 (12 oz) bag frozen stir-fry vegetables
1 (10 oz) bag frozen cauliflower rice
1 tsp fresh grated ginger (or ¼ tsp ground)
1–2 tbsp teriyaki sauce (to taste)
1 tsp sriracha
1 tsp honey
1–2 tsp oil (for crisping)
Green onion, chopped
Fresh cilantro, chopped
Lime wedges
Pickled red onion
Instructions
Heat a large skillet over medium-high. Add a drizzle of oil, then the ground chicken. Cook until browned and cooked through, breaking it apart as it cooks.
Steam the cauliflower rice in the microwave according to package directions. Add it to the pan along with the frozen stir-fry veggies.
Cook everything together over medium-high heat for 5–7 minutes, stirring occasionally, until the cauliflower rice and veggies get golden and slightly crispy.
Stir in ginger, sriracha, honey, and teriyaki sauce. Continue cooking another 2–3 minutes until the sauce thickens and caramelizes, coating everything in a glossy glaze.
Top with green onion, cilantro, and a squeeze of lime. Add pickled red onions for a tangy pop of color and flavor.
