Mediterranean Glow Bowls

Ingredients

  • Base:

    • 2 cups arugula

    • 1 cup cooked rice (or grain of choice)

  • Veggies:

    • 1 small head broccoli, cut into florets

    • 1 medium sweet potato, cubed

    • Olive oil, salt, pepper

  • Crispy Tofu:

    • 1 block extra-firm tofu, pressed & cubed

    • 2 Tbsp nutritional yeast

    • 1 tsp garlic powder

    • 1 tsp paprika (smoked or sweet)

    • Salt + pepper

  • Tzatziki:

    • ½ cup Greek yogurt

    • ¼ cucumber, grated & squeezed dry

    • 1 clove garlic, minced

    • Juice of ½ lemon

    • Salt + dill

  • Hummus Dressing:

    • 3 Tbsp hummus

    • Juice of ½ lemon

    • 1–2 Tbsp water (to thin)

  • Toppings:

    • Crumbled feta


Instructions

  1. Roast the Veggies: Preheat oven to 425°F. Toss broccoli + sweet potato with olive oil, salt, and pepper. Roast for 20–25 min until golden and tender.

  2. Crispy Tofu: Toss tofu cubes with nutritional yeast, garlic powder, paprika, salt, and pepper. Air fry at 400°F for 12–15 min (or bake at 425°F for 25 min).

  3. Make Tzatziki: Mix yogurt, cucumber, garlic, lemon juice, dill, and salt until creamy.

  4. Make Hummus Dressing: Stir together hummus, lemon juice, and water until pourable.

  5. Assemble Bowls: Layer rice + arugula as the base. Top with roasted veggies, crispy tofu, and a dollop of tzatziki. Drizzle with hummus dressing and finish with crumbled feta.
