Cozy & Healthy Chocolate Chip Banana Bread

Ingredients:

  • 4 very brown bananas, mashed

  • 1 large egg

  • 1 tsp vanilla bean paste

  • 3 tbs dark brown sugar

  • 2 tbs maple syrup

  • 1 tsp pumpkin pie spice

  • 1 tsp baking soda

  • 1 tsp baking powder

  • ½ tsp salt

  • 1 ½ cups all purpose unbleached wheat flour

  • 2 tbs unsweetened apple sauce

  • ¾ cup semi-sweet or dark chocolate chips 


Instructions:

  1. Preheat the oven to 350 degrees. In a large mixing bowl, mash the bananas until soft. Use a fork to whisk in the egg and vanilla bean paste.

  2. Add in the brown sugar, maple syrup, pumpkin pie spice, baking soda, baking powder, and salt. Mix well until all ingredients are combined.

  3. Mix in the flour ½ cup at a time until well-incorporated. Add in the applesauce, and once a uniform mixture has been achieved, mix in the chocolate chips.

  4. Pour the batter into a bread loaf pan lined with parchment paper. Bake for 45 minutes on the middle rack, until a knife comes out clean and the top is golden brown.

  5. Slice and enjoy with some coconut whipped cream or plain Greek yogurt! This bread stores well in the fridge and makes the perfect sweet and nourishing snack or breakfast.
