Stewed Peaches with Honey and Cinnamon

Ingredients:

  • 5 ripe peaches, rinsed and sliced 

  • 3–4 Tbsp honey 

  • 1 tsp ground cinnamon 

  • 1 tsp vanilla bean paste 

  • 1 tsp cornstarch

  • 2 Tbsp water


Instructions:

  1. Rinse and slice peaches into wedges.

  2. In a medium saucepan over medium heat, add peaches, honey, and cinnamon. Stir gently.

  3. Let the peaches cook for about 8–10 minutes, stirring occasionally, until they start releasing their juices and softening.

  4. In a small bowl, mix cornstarch with water until smooth (slurry). Pour into the peaches while stirring.

  5. Cook another 2–3 minutes, until the sauce thickens slightly and coats the peaches.

  6. Serve warm over yogurt, oatmeal, pancakes, or ice cream!
