Crockpot Chicken Wild Rice Soup

Ingredients:

1.5 lbs chicken breast
1 large onion, finely chopped
2 large garlic cloves, minced
2 large carrots, chopped
3 celery stalks, diced
2 potatoes, diced
2 cups fresh mushrooms
1.5 cups wild rice
7 cups low-sodium chicken broth
1/2 tsp dried thyme
2 tbsp garlic powder
2 tsp salt
Ground pepper to taste
2 cups whole milk
Instructions:
Preheat a pan on medium heat, add butter, and sauté onion and garlic for 3–4 minutes.
Add carrots, celery, fresh mushrooms, thyme, garlic powder, salt, and pepper. Sauté for 5 minutes.
Transfer to slow cooker along with chicken, potatoes, wild rice, and broth. Cover and cook on low for 8–10 hours or high for 5–6 hours.
Remove chicken and shred with 2 forks. To pot, add milk and use an immersion blender to thicken.
Add shredded chicken and parsley. Serve with crusty bread and grated Parmesan.
