Crockpot Chicken Wild Rice Soup

Ingredients:

  • 1.5 lbs chicken breast

  • 1 large onion, finely chopped

  • 2 large garlic cloves, minced

  • 2 large carrots, chopped

  • 3 celery stalks, diced

  • 2 potatoes, diced

  • 2 cups fresh mushrooms

  • 1.5 cups wild rice

  • 7 cups low-sodium chicken broth

  • 1/2 tsp dried thyme

  • 2 tbsp garlic powder

  • 2 tsp salt

  • Ground pepper to taste

  • 2 cups whole milk


Instructions:

  1. Preheat a pan on medium heat, add butter, and sauté onion and garlic for 3–4 minutes.

  2. Add carrots, celery, fresh mushrooms, thyme, garlic powder, salt, and pepper. Sauté for 5 minutes.

  3. Transfer to slow cooker along with chicken, potatoes, wild rice, and broth. Cover and cook on low for 8–10 hours or high for 5–6 hours.

  4. Remove chicken and shred with 2 forks. To pot, add milk and use an immersion blender to thicken.

  5. Add shredded chicken and parsley. Serve with crusty bread and grated Parmesan.
