Green Chicken Chile Enchiladas

Ingredients

  • 1.5 lbs chicken breast

  • 3/4 package green enchilada sauce

  • 1 can black beans, rinsed and drained

  • 1 small can diced green chiles

  • 1/2 white onion

  • 1 tsp cumin

  • 1 tsp chile powder

  • 1 tsp smoked paprika

  • 1 tsp southwest seasoning

  • 1/4 cup plain greek yogurt

  • 6 flour tortillas

  • Shredded low fat taco cheese

  • Optional, for serving: pickled jalapeños, cilantro, avocado, sour cream


Instructions

  1. Add all ingredients other than the cheese and tortillas to a crockpot and cook on high for 2.5–3 hours.

  2. Turn off the crockpot and shred the chicken with two forks. Make sure the mixture is combined.

  3. Preheat the oven to 350 degrees.

  4. Make your enchiladas by filling with the chicken mixture and adding to a casserole dish. Top with taco cheese and the remaining enchilada sauce.

  5. Bake for 15–20 minutes, and serve with desired toppings. Enjoy!
