Healthier Chicken Broccoli Ziti

(Makes 4 servings)

For the Chicken:
16 oz chicken breast tenderloins
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
1 tsp smoked paprika
1 tsp dried basil
Salt & pepper to taste
1 tbsp grated Parmesan cheese
For the Pasta & Sauce:
8 oz ziti or pasta of choice (e.g., Banza chickpea pasta)
½ cup low-fat milk
1 cup low-fat cottage cheese
½ cup grated Parmesan cheese
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
1 tsp dried basil
Salt & pepper to taste
Veggies:
4 cups broccoli florets
Instructions
Cook the Chicken: Season chicken with all listed spices and 1 tbsp Parmesan. Air fry at 395°F for 15–18 minutes or until fully cooked and slightly golden.
Cook the Pasta: Boil water in a large pot. Add pasta and cook according to package instructions. Before draining, reserve ½ cup of the pasta water.
Make the Sauce: In a blender, combine cottage cheese, milk, ½ cup Parmesan, all sauce spices, and the reserved ½ cup pasta water. Blend until smooth and creamy.
Steam the Broccoli: Steam broccoli until just tender, about 5–6 minutes.
Assemble the Dish: Slice the cooked chicken. In a large bowl or skillet, combine pasta, broccoli, sliced chicken, and sauce. Toss to coat evenly. Warm gently if needed.
Serve: Top with cracked black pepper and a little extra Parmesan, if desired.
