Healthy & Delicious Taco Salad

Ingredients:

1 tbsp olive oil
1 white onion, diced
1 lb 90% lean organic ground beef, chicken, turkey, or tofu
1 packet taco seasoning (I like the Siete brand)
½–¾ cup water
1 head romaine lettuce, chopped and washed
½ cup coleslaw vegetable mix
¼ cup cilantro, chopped
⅓ cup lite Mexican cheese blend
½ avocado, diced
4 tortilla chips, crushed
2 tbsp plain Greek yogurt or light sour cream
Dressing of choice (I recommend Bolthouse Avocado Ranch or Trader Joe's Cilantro Dressing)
Optional Additions:
Black beans and brown rice for a heartier bowl
Instructions:
Heat olive oil in a skillet over medium heat. Add the diced onion and sauté until translucent (about 5 minutes). Add the ground meat or tofu, breaking it apart as it cooks. Once fully cooked, stir in the taco seasoning and ½ cup of water (add more if needed). Simmer until well combined.
In a large bowl, combine the chopped romaine lettuce and coleslaw vegetable mix.
Add ¼ of the prepared taco meat to the salad base. Top with the cheese, cilantro, crushed tortilla chips, and diced avocado.
Drizzle with your preferred dressing and add your desired amount of Greek yogurt or sour cream. Toss gently to combine. Enjoy!
Note: For a more filling option, layer black beans and brown rice under the salad mix for a healthier homemade Chipotle bowl.
