Honey Dijon Chicken Bites

Ingredients:

  • 1 tbsp olive oil (plus more for cooking)

  • 3 tbsp Dijon mustard

  • 3 tbsp honey

  • 1 package chicken breast tenderloins, cubed

  • 1 tsp garlic salt

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp ranch seasoning


Instructions:

  1. Make the marinade: In a bowl, mix the olive oil, Dijon mustard, honey, and all seasonings. Add the cubed chicken and toss to coat. Let marinate for at least 30 minutes or all day for best flavor.

  2. Cook the chicken: Heat a drizzle of olive oil in a skillet over medium heat. Add the marinated chicken in a single layer. Do not stir or flip right away, let it cook undisturbed for 4–5 minutes so the honey can caramelize into a golden glaze.

  3. Flip and finish: After 4–5 minutes, flip the chicken pieces and cook another 2–3 minutes until fully cooked and browned on both sides.

  4. Serve & enjoy: Plate with rice pilaf and steamed or roasted garlic. Finish with a drizzle of hot honey or extra honey-Dijon mixture if desired. Enjoy!
