Mexican Crunch Salad

Ingredients

(Serves 2)

  • 1 head of lettuce, chopped

  • 1 cup coleslaw mix or shredded cabbage

  • 1 bell pepper, diced 

  • 1/2 cup corn, rinsed 

  • 1/4 red onion, finely diced 

  • 10 cherry tomatoes, halved 

  • 4 mini cucumbers, finely sliced 

  • 1/3 cup shredded Mexican cheese 

  • 8 oz seasoned and cooked protein (tofu, chicken, steak etc), chopped 

  • 1 serving Trader Joe’s elote corn dippers and/or Trader Joe’s takis, chopped 

  • Optional: chopped cilantro 


For the dressing 

  • 2 servings ranch dressing (I like Bolthouse or primal kitchen) 

  • 1-2 servings buffalo sauce 

  • 80g fat free cottage cheese

  • Juice of 1 lime 

  • 2-4 tbs water, to thin 

  • Optional: I like to add a little ranch seasoning and green goddess seasoning from Trader Joe’s! 


Instructions 

  1. Chop/prepare all of your salad ingredients and add to a large mixing bowl 

  2. In a blender, add all dressing ingredients. Blend for 1-2 minutes until smooth and creamy. 

  3. Add the dressing to the salad and mix well. 

  4. Plate your gorgeous salad in two bowls and enjoy!!
