Mexican Crunch Salad

Ingredients

(Serves 2)
1 head of lettuce, chopped
1 cup coleslaw mix or shredded cabbage
1 bell pepper, diced
1/2 cup corn, rinsed
1/4 red onion, finely diced
10 cherry tomatoes, halved
4 mini cucumbers, finely sliced
1/3 cup shredded Mexican cheese
8 oz seasoned and cooked protein (tofu, chicken, steak etc), chopped
1 serving Trader Joe’s elote corn dippers and/or Trader Joe’s takis, chopped
Optional: chopped cilantro
For the dressing
2 servings ranch dressing (I like Bolthouse or primal kitchen)
1-2 servings buffalo sauce
80g fat free cottage cheese
Juice of 1 lime
2-4 tbs water, to thin
Optional: I like to add a little ranch seasoning and green goddess seasoning from Trader Joe’s!
Instructions
Chop/prepare all of your salad ingredients and add to a large mixing bowl
In a blender, add all dressing ingredients. Blend for 1-2 minutes until smooth and creamy.
Add the dressing to the salad and mix well.
Plate your gorgeous salad in two bowls and enjoy!!
