Mini Taco Night

Ingredients:

Cooked protein of choice (e.g., ground beef, turkey, chicken, tofu, or lentils), seasoned with taco seasoning
4 mini tortillas
Freshly grated sharp cheddar
Thinly sliced red onion (pickled red onion is also great!)
Cubed avocado
Fresh cilantro
Salsa verde (store-bought or homemade)
Instructions:
Warm tortillas in a dry skillet over medium heat until soft and slightly charred.
Layer on your cooked protein, cheese, onion, avocado, cilantro, and salsa verde.
Enjoy!
