Mini Taco Night

Ingredients:

  • Cooked protein of choice (e.g., ground beef, turkey, chicken, tofu, or lentils), seasoned with taco seasoning

  • 4 mini tortillas

  • Freshly grated sharp cheddar

  • Thinly sliced red onion (pickled red onion is also great!)

  • Cubed avocado

  • Fresh cilantro

  • Salsa verde (store-bought or homemade)


Instructions:

  1. Warm tortillas in a dry skillet over medium heat until soft and slightly charred.

  2. Layer on your cooked protein, cheese, onion, avocado, cilantro, and salsa verde.

  3. Enjoy!


Note:This is a perfect way to use up leftover taco meat from earlier in the week. Check out my other taco recipes and protein bowls on the page for more ideas!
