Soyaki Chicken Thigh Bowls

Ingredients:

  • 1 Tbs Olive Oil

  • 1-2 Zucchini 

  • 1-2 Summer Squash 

  • 1 Tsp Each:

    • Paprika

    • Salt

    • Pepper

    • Green Goddess Seasoning 

    • 21 Seasoning Salute Blend 

  • ¼ Cup Freshly Grated Parmesan

  • 1 Cup Jasmine or Basmati Rice, Rinsed Well

  • 1 Lb Chicken Thighs 

  • ½ cup Trader Joe’s Soyaki Marinade (or any Teriyaki marinade)

  • 2 Tbs Sliced Green Onion 


Instructions:

  1. To prepare the rice: Add 1 cup of rinsed basmati or jasmine rice to your rice cooker with 2 cups of water. Set the rice cooker to “cook” while you prepare the remainder of the meal.

  2. To prepare the veg: Preheat the oven to 425 degrees. Arrange the zucchini and squash slices evenly on a baking sheet. Drizzle with olive oil and top with your preferred spices and the parmesan. Mix well, and place in the preheated oven for 25 minutes while you cook the chicken.

  3. To prepare the chicken: Marinate the chicken for up to 10 hours prior to cooking in the Soyaki marinade. When you are ready to prepare the meal, remove the chicken and place in the basket of your air fryer. Brush the excess sauce over the chicken, and air fry at 375 degrees for 20 minutes.

  4. To assemble: Add the rice to the base of the bowl, topping with the sliced chicken thigh. Add the roasted veg and top with sliced green onion. Optional toppings that also taste great are sriracha and/or spicy mayo!
